- 1 Lemon
- 1 large shallot
- 2 Tsp
- 1/2 cup champagne vinegar
- 1 1/2 cups extra virgin Olive Oil
- 1 pinch of salt
- 5 cups of a mix of Gem Lettuces
- 1 Bunch of cilantro- chopped
- Tarragon (to taste)
- Remove the stems from the lemon, slice it in half and remove any seeds.
- Put the lemon and shallot halves in the food processor along with the pinch of salt, dijon mustard, and vinegar.
- Mix up the food processor and taste before putting on your greens.
