Dressing Recipe:

  • 1 Lemon
  • 1 large shallot
  • 2 Tsp dijon mustard
  • 1/2 cup champagne vinegar
  • 1 1/2 cups extra virgin Olive Oil
  • 1 pinch of salt

Salad Contents:

  • 5 cups of a mix of Gem Lettuces
  • 1 Bunch of cilantro- chopped
  • Tarragon (to taste)

Directions:

  1. Remove the stems from the lemon, slice it in half and remove any seeds.
  2. Put the lemon and shallot halves in the food processor along with the pinch of salt, dijon mustard, and vinegar.
  3. Mix up the food processor and taste before putting on your greens.
  4. Enjoy!
